An authentic ramen rests on three pillars, honoured in every bowl at Iwao. The broth first: drawn in-house, slowly, to a deep roundness no powder can imitate. Then the tare — shoyu, miso — mixed by hand to give the bowl its character. And the noodle, cooked firm and served piping hot. Nothing is made in advance: every ramen is built to order, facing the open kitchen.
